Matcha Coconut Energy Bites

Wherever your next adventure takes you, pack a bunch of these flavorful, energizing Matcha Coconut Energy Bites!

Makes 15-20.

An original recipe prepared for us by modest marce.

Ingredients

    • 1 cup old fashioned rolled oats
    • ½ cup sliced almonds
    • ½ cup unsweetened shredded coconut
    • 1 cup pitted dates, soaked
    • 1 Tbsp Aiya Culinary Grade Matcha
    • 3 Tbsp raw cocoa nibs
    • 1 pinch of salt
    • 2 Tbsp maple syrup
    • 1 tsp vanilla extract

Directions

    1. Using a food processor, pulse together the oats, almonds and coconut until ground.
    2. Add the dates (side note: soak the dates in hot water to soften), Matcha, cocoa nibs, salt, maple syrup and vanilla. blend on low until a paste is formed.
    3. Shape into evenly sized balls. Roll in additional coconut or Matcha if desired.
    4. Refrigerate and enjoy!
