Matcha Gingerbread Men

The warm flavors of ginger, nutmeg, and cinammon are in encapsulated in these adorable lifelike cookies. Perfect as a gingerbread house decoration!

An original recipe prepared for us by modest marce.


    • ½ cup unsalted butter, softened
    • ½ cup dark brown sugar
    • cup raw honey
    • 1 large egg
    • 1 tsp vanilla extract
    • ½ Tbsp Aiya Culinary Grade Matcha
    • ½ tsp baking soda
    • ½ tsp ground cinnamon
    • 1 tsp ground ginger
    • ¼ tsp ground nutmeg
    • ¼ tsp cloves
    • ¼ tsp salt
    • 3 cups all purpose flour
    • royal icing, for decorating


    1. In the bowl of a standmixer with the paddle attachment, cream butter and brown sugar.
    2. Add honey, egg, vanilla and Matcha. Beat until ingredients are well blended.
    3. In a separate mixing bowl sift baking soda, cinnamon, ginger, nutmeg, cloves, salt and flour.
    4. Add the dry ingredients to the wet ingredients. Beat until the dough comes together.
    5. Turn out onto a floured surface and shape into a disk. Wrap in plastic wrap and refrigerate for two hours or overnight.
    6. Roll out dough to approximately a ¼" thick. Cut into desired size gingerbread men.
    7. Bake at 350F until the gingerbread begin to puff and the edges very slightly brown. Let cool before frosting.
    8. Frost as desired with royal icing. Desired using a ziplock bag or frosting tip!
